The founder of Kotobukiya (the current Suntory), Shinjiro Torii, began building Japan's first malt whiskey distillery on the outskirts of Kyoto in 1923. The Yamazaki district now known as the birthplace of Suntory whiskey, is an area also known since ancient times for its excellent water by the name of Minaseno.


Suntory introduced Suntory Shirofuda ("white label") in 1929, the first genuine whiskey to be produced domestically. After further refinements to suit the discriminating market of Japan, the premium whiskey Kakubin ("square bottle") was born.


Another distillery was built in 1973 in Hakushu at the foot of Mt. Kaikomagatake in Japan's Southern Alps. Suntory refined its techniques at these two ideal distillery sites to develop a variety of first-rate unblended whiskies and bring to market such products as the single malt whiskies Yamazaki and Hakushu, as well as Hibiki blended whiskey.

James Beam began selling barrels of whiskey in 1795. By 1935, his family's business was formally established as the James B. Beam Distilling Company. Ten years later, the Chicago spirits merchant Harry Blum bought the company, and in 1968 sold it to American Brands, Inc.


In 1987, the James B. Beam Distilling Company purchased National Distillers and renamed itself the Jim Beam Brands Company. It was known as Jim Beam Brands Worldwide, Inc. by the time Fortune Brands purchased it in 2005.[3] Fortune Brands also acquired 20 brands from Allied Domecq in 2005, worth $5 billion,[4] which turned Fortune Brands into one of the largest producers of whiskey in the international market.[5]

In addition to brands produced directly by the company and its subsidiaries, Beam Suntory imports and markets some brands produced by others, such as the DeKuyper cordial and the coffee liqueur Kamora. Beam facilities also produce spirits for brands owned by other companies, such as Calvert Extra blended whiskey, now owned by Luxco.

So why won't Japanese producers just send us more of their delightful spirit? For one, they aren't all that confident that Americans will drink their whiskey the "right" way. "Japanese whiskey distillers are very protective of their product," says Kim. "It's a made for Japanese palates, so it needs context."


After the ISC win, Suntory tried to reconnect with American tipplers. This time it exported its Yamazaki 12-year whiskey, a top-shelf single malt, which was received well at Japanese restaurants and elsewhere.


Tiffany Soto, beverage manager for Pabu in Baltimore, stocks 10 Japanese whiskies that took her over a year to source. She says she sees a growing interest in the spirits. "Japanese whiskey sales account for more than 35 percent of our total cocktail sales, with demand increasing each month," she says.


For consumers who simply cannot wait, it is possible to bring in Japanese bottles by buying them online, through mail order or in a suitcase. But the regulations and the legality of these options vary widely around the U.S. In the meantime, it will be a while before Japanese whiskey is as ubiquitous as ramen.
